Winter Fun and a little Chocolate Fudge!



It has been a while since I have posted. Life is busy, full and blessed!  What a winter it has been. Fortunately,  we love the cold and snow, so we have been having so much fun skiing and snow boarding!




We have spent many hours a week enjoying this beautiful winter, outdoors, together as a family.  It has also been a great way to get regular exercise during these long, cold months. I feel thankful to have the opportunity, to spend this precious time with my family. 

Speaking of regular exercise,  I wanted to share a fantastic new recipe. Our family is on a new healthy journey together and in the process we are cutting out sugar and processed foods. But sometimes a girl needs some chocolate!   I found this recipe on pinterest today, and wanted to share.
Healthy Chocolate Fudge
One-half cup coconut oil
One-half cup of honey
One-half, plus 2 tbsp of coco
2 Tbsp of peanut butter
Melt coconut oil and honey in microwave for 40 seconds. Add coco. Mix until well blended and add peanut butter. Pour into a pan lined with parchment paper.  Take an extra tbsp of peanut butter and swirl over the top and into the fudge. Place in freezer until hardened. 
This is absolutely delicious,  all natural, and will definitely satisfy your sweet tooth!
